Katie's Soft Sugar Cookies

I made these at the house with Crozier, Jason, Tara and Chris this last Christmas Eve!  It was so fun and pretty simple.

Recipe
1 cup butter (soft)
2 eggs
5 TBSP milk
1 TBSP vanilla
1 1/4 cup sugar
4 cups flour (or a little more)
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt 

Mix all ingredients, roll out the dough with flour, get the cookie cutters out and place the "cut" cookies on a cookie sheet (no need to grease it).  Bake @ 350 for 8 minutes or until the center of the cookie is "set" or does not shine.  (Don't overcook if you want them to be soft!).  Doubling the recipe makes about 75 cookies.  

Frosting
8 oz. package cream cheese (soft)
9 TBSP butter (soft)
4 1/2 cup powdered sugar
2 tsp. vanilla
Add food coloring if wanted :) 

Katie's Breakfast Crepes

Chris and I LOVE making crepes.. I feel like they are just pancakes on steroids haha.  This recipe is from an Aunt of mine who served her mission in France, the capital of Crepes ;)  If you like a sweet bite for breakfast once in a while, this will not disappoint!

Recipe:

1 cup flour
1/8 cup sugar
pinch of salt
1 cup milk
1 egg
1/2 tsp vanilla (but I actually put in twice as much because I love vanilla)
1/3 cup oil

Mix well in a blender (or with a hand mixer, or by hand.. we've done it all).  Cook over a hot, buttered griddle/pan with about 1/3 cup per crepe (big enough so there is room to roll with fillings).

This recipe is perfect for feeding two adults with big appetites (Chris and me ha!), so those with kiddos may want to double it.

Filling Ideas:

Peanut Butter & Honey
Fruit: Bananas, Strawberries, Raspberries, Blueberries
Brown Sugar & Butter (tastes like a maple bar to me!)
Powdered Sugar
Any type of Jam (my favorite is homemade raspberry jam)
Nutella
Whipped Cream to top it off!

Oh Boy! Oatmeal Cake

1 c. quick oatmeal
1 ½ c. boiling water
1 cube butter
1 c. brown sugar
1 c. white sugar
2 eggs
1 ½ c. flour
½ t. cinnamon
1 t. soda
½ t. salt

Soak oatmeal in boiling water while preparing the rest of ingredients.  Cream butter with sugars until fluffy.  Add beaten eggs, then flour and seasonings.  Add oatmeal.  Bake 35 min. @ 350.  Very moist.

Icing:
1 cube butter
¼ c. evaporated milk
¾ c. brown sugar
1 t. vanilla
½ cup chopped nuts
1 c. coconut

Bring to boil the butter, sugar, and milk.  Remove from heat, add vanilla, nuts, and coconut.  Pour on hot cake.

Four-Layer Dessert

1st layer:
1 c. flour
½ c. butter
½ c. chopped pecans
Mix and press in a 9x13” pan.  Bake at 350 degrees for 15 min (Don’t brown and cool completely.)

2nd layer:
1 (8 oz) pkg cream cheese
1 c. powdered sugar
1 c. Cool Whip (set out during the 1st layer)
Blend together and spread over 1st layer

3rd layer:
2 small pkgs chocolate instant pudding
3 c. milk
1 t. vanilla
Beat until thick and spread over 2nd layer.

4th layer:

Top with more Cool Whip and sprinkle with chopped pecans

Christmas Dessert

Heat until melted:
1 ½ sq. butter
1 ½ c. brown sugar

Cool & Mix:
3 c. Rice Krispies
¾ c. chopped nuts
1 ½ c. shredded coconut
Add sugar/butter mixture and stir until coated.  Put half of the Rice Krispie mixture in a cake pan and spread evenly.  From a half gallon of vanilla ice cream (oblong container), cut ice cream into 1” thick slices and lay over Rice Krispie mixture.  Spread remaining mixture over ice cream and freeze.  Serve with sauce below.

Sauce:
1 pkg Danish dessert
1 pkg frozen raspberries

Cook for sauce.  Pour over rice and cream to serve.

Hannah's Cornflake Christmas Wreaths

Ingredients:
  • 1/3 cup butter
  • 5 cups mini marshmallows
  • 1 tsp green food coloring (or more or less, depending on how dark you want the green)
  • 6 cups cornflake cereal
  • red cinnamon candies (Red Hots)
Instructions:
Melt butter over heat in a large saucepan. Add marshmallows and stir until completely melted, then remove from heat. Stir in food coloring. Add cornflakes, stirring until well-coated. Use a 1/4 cup to divide cornflake mixture onto parchment paper or cookie sheet. With buttered fingers, quickly shape into individual wreaths. Dot with Red Hots, and enjoy :)
